Taco Thursday

Again, I'm not Pioneer Woman but I think these quick & easy recipes are worth sharing.

Chicken Quesadillas

 You're going to need:

butter
lemon juice
chili powder
seasoning salt
cajun seasoning
 1 can of black beans
1 can of sweet kernel corn
 5-10 whole wheat tortillas
 Shredded Mexican blend cheese
6 boneless/skinless chicken tenders

In a big skillet (told you I'm not PW!) add 1 part lemon juice & 1 part water... just enough to cover the bottom of the skillet.

Add the 6 pieces of chicken into your lemon juice/water. Cover the top of the chicken with seasoning salt. Put the lid on and let this simmer on medum-high until your chicken looks like its cooked through. 
(10ish minutes or so)

Flip each piece of chicken and add the seasoning salt again. Drain the water out of the skillet and return it to the heat. Add a dash of chili powder& a dash of cajun seasoning to your chicken for a little extra spice.

Drain your can of corn and can of black beans together and let them sit until you're ready to add them to the quesadillas.

Put your chicken into a bowl and set it to the side until you're ready to add it to the quesadillas.


In a clean skillet, turn the heat up to medium and let it get hot. Add a tablespoon of light butter into your skillet. Throw in your tortilla and move it around the bottom of the skillet to cover that side of the tortilla with the butter.

Time to put it all together!

Start shredding the chicken and add it onto one half of the tortilla


Okay, this was the first quesadilla I made.
DON'T add chicken to the entire top of the tortilla. ONLY on one half of it.


Add a layer of the black beans / corn

 Again, ONLY add your toppings to one half of the tortilla.
Sprinkle a LITTLE of the shredded cheese on top

Fold over one side of the tortilla, forming the shape of a taco


Make sure to brown both sides of the quesadilla evenly.
These things are pretty fragile so handle with care =)


There you go! 
Quick, easy, low calorie & low fat!
